Simply mix together the following and season to taste:
4 tablespoons chopped fresh parsley
4 tablespoons crème fraiche
4 tablespoons mayonnaise
4 spring onions, chopped
1 tablespoon capers
1 tablespoon gherkins, finely chopped
1 teaspoon horseradish (optional)
Salt and pepper
Juice of ½ lemon or lime
Improves in flavor if allowed to sit for a while!
