Erinites could not fail to know this wonderful little coffee shop started in 2105 by its delightful owners, Brady and Rachel. Rachel is a creative wizard in the kitchen and her baked goods are something else. I love how, for example, she puts a twist on old favourites, like nainamo bars. Why not use matcha in them! Her gingerbead cookies are the perfect balance of ginger with a soft gooey centre and crunch on the outside. I could go on! How she does it I don’t know but she’s an amazing baker. One day I hope she writes a book but I am sure at the moment she is too busy being a first time mum! Brady is modest, charming and knows his stuff. We love the coffee at the Tin Roof, infact we love it so much, we buy the beans and drink it at home too.
