Mexican Street Corn

Robert’s brother first made this for us last year and it was yummy! The Ontario Corn season is upon us and whilst it is delicious to eat fresh corn steamed with oodles of butter, this is another great way to eat it.

RECIPE:

·       6 to 8 medium ears sweet corn, husks removed

·       1/2 cup sour cream

·       1/2 cup mayonnaise

·       1/2 cup chopped cilantro

·       1 clove garlic, minced

·       1/4 teaspoon ground chipolte pepper, to taste

·       2 teaspoons finely grated lime zest, from 1 lime

·       2 tablespoons lime juice, from 1 lime

·       1/2 cup feta, finely crumbled

·       Lime wedges, to serve

Boil Corn, brush with melted butter and then grill.  Meanwhile mix mayonnaise, sour cream, lime zest, juice and garlic. When corn is lightly grilled remove from grill and brush mayonnaise mixture over the corn. Sprinkle with crumbled feta cheese, chipotle pepper, cilantro and serve with lime wedges.
